Strawberry & Watermelon Summer Salad

When you think of summer, what comes to mind? Perhaps, lake days or fireflies outside as the day turns to night. What about food-wise? For me, this refreshing combo hits the spot with watermelon, strawberries, herbs, feta, and pistachios. It’s a beautiful combination!


BENEFITS

  • Strawberries are considered an antioxidant powerhouse. Antioxidants are substances that can protect your cells against free radicals, which means reducing oxidative stress and preventing disease!

  • Watermelon is full of vitamins, minerals, and antioxidants.

  • Pistachios are high in fiber, have a higher calorie-protein ratio than most nuts, high quantities of polyunsaturated and monounsaturated fats, all of which are linked to healthy cholesterol levels and reduced risk of heart disease.



Watermelon & Strawberry Salad


Description:
Flavors of summer all in one! The combination of fresh fruit, herbs, and then the feta is close to magic in this recipe! Eat on it's own, pair with grilled steak or whatever suits your fancy.



INGREDIENTS:

  • 2 cups cubed Watermelon

  • 2 cups Strawberry

  • 1/4 cup diced pistachios

  • 1/4 cup roughly chopped Fresh Basil

  • 1/2 cup crumbled Feta

INSTRUCTIONS:

  1. In a large bowl, combine the watermelon, strawberries, and basil leaves.
  2. Dice pistachios and crumble feta into small pieces.
  3. Top fruit mixture with pistachios & crumbled feta, serve or chill for later!


NOTES:

  • Sliced cucumbers are a nice option if you'd like some crunch

  • Another option is to add a Tablespoon of olive oil & sea salt to taste!

  • Fell free to add other herbs like mint or parsley.
