White Chicken Chili


Description: Every blog needs a recipe from the author's grandmother. Well, here is mine! Meet my take on Nan's wholesome White Chicken Chili. It's healthy, hearty, flavorful and perfect for the cooler season.

INGREDIENTS:

  • 2 tablespoons olive oil

  • 1 yellow onion, diced

  • 1 green bell pepper, diced

  • 5 garlic cloves, minced

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 teaspoons cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon italian season

  • 4 cups chicken broth

  • 4 cups shredded chicken breast

  • 2 tablespoon lime juice

  • 1 tablespoon lime zest

  • 8 oz. green chiles

  • 1 15 oz. can great northern beans (drained and rinsed)

  • 1 15 oz. can cannellini beans (drained and rinsed)

  • 1 15 oz. can corn (drained and rinsed)

  • 4 oz. Neufchatel cheese

  • Cilantro, fresh lime, avocado, jalapeno, and greek yogurt for garnish



INSTRUCTIONS:

Upfront Prep

1. It sounds simple, but open all of your cans (beans, corn, green chiles, etc.)
2. Measure all of your spices and have them in a small bowl ready to go.
3. Blend one cup of chicken broth with one cup of the beans of your choice in a food processor or blender. Set this aside.

Chilli Making Time

1. Heat olive oil in large pot over medium-high heat. Add the onion and bell pepper. Cook for 4-5 minutes, stirring frequently.
2. Add the garlic & spices, then stir for another minute to let the aroma of the garlic come out and the spices to toast!
3. Add the remaining chicken broth and pureed bean mixture. Simmer uncovered for 15 minutes.
4. Stir in the green chilies, shredded chicken, corn, remaining beans, Neufchatel cheese, and chopped cilantro. Simmer 3-5 minutes to warm all ingredients, then add lime zest & lime juice. Give it all a stir.

Finishing Touches

1. This can be served warm right after cooking (my favorite for cooler months) or refridgerated and served chilled.
2. When ready to serve, add the White Chicken Chili to your favorite bowl.
3. Garnish with cilanto, fresh lime zest, lime juice, avocado slices, japapeno slices, and a dollop of greek yogurt. Shredded monetery cheese can be a nice addiction to, really whatever suits your fancy.


Notes:

  • With most things in cooking, this is extremely adaptable. You could use all great northern white beans or choose to have two different varieties.
  • It could be vegetarian by selecting a vegetarian broth and skipping the chicken.
  • You could even be dairy free by cutting out the Neufchatel cheese and greek yogurt topping at the end. Explore, stay curious, and enjoy!
